Nigeria is the 3rd largest producer of peanuts in the world with 10% of global production and the number 1 producer in Africa with about 39% of Africa’s annual production. Peanuts are predominantly grown in the dry areas of Nigeria including Kano, Kwara, Sokoto, Zamfara, and Kaduna. Nigerian peanuts are mostly sought after due to their freshness and aroma. Nigerian peanut tends to be organic because it is grown using cow or poultry droppings as natural fertilisers.

Peanut oil: Peanut oil is often used in cooking because it has a mild flavor and a relatively high smoke point. Due to its high monounsaturated content, it is considered healthier than saturated oils and is resistant to rancidity. The several types of peanut oil include aromatic roasted peanut oil, refined peanut oil, extra virgin or cold-pressed peanut oil, and peanut extract. Refined peanut oil is exempt from allergen labeling laws in the United States.

Peanut Cakes: Peanut cake, also known as groundnut cake, is a byproduct of peanut oil extraction. It is a high-protein, nutritious, and versatile product used for human consumption, animal feed, and food processing.

Peanut Butter: Peanut butter is a food paste or spread made from ground dry roasted peanuts. It often contains additional ingredients that modify the taste or texture, such as salt, sweeteners, or emulsifiers. Peanut butter is served as a spread on bread, toast, or crackers, and used to make sandwiches (notably the peanut butter and jelly sandwich). It is also used in several confections, such as peanut-flavoured granola bars, croissants, and other pastries.

Peanut Flour: Peanut flour is a high-protein, gluten-free flour made by grinding defatted peanuts (after oil extraction) or roasting and grinding whole peanuts. It is widely used in baking, protein supplements, thickening sauces, and food fortification.
